My go-to summer salad

I don’t have an official recipe, but ingredients are very simple:
- red quinoa;
- crumbled feta cheese;
- red onion;
- roasted red (yellow, orange) peppers;
- balsamic vinegar (I used red wine vinegar – also worked);
- parsley (or any herb you like)
- salt and pepper to taste

Simply mix all the ingredients and salad is ready to serve. Yummy and healthy. I now make it every time we’re having a bbq and even got V to try it, as he’s no fan of quinoa.

  1. Yum!! To those not familiar with quinoa, it's an ancient grain packed with protein. You just simmer it until it's done about 10-15 min and then fluff it with a fork. ~M

    1. Thanks for adding that info! I'm trying to cook this grain more often, it's still quite new addition to our meals, but I'm glad we discovered it:)
